Extra sales are a break-even calculation, not a forecast. GP excludes labour, rent and other overheads.

Cost every ingredient before trusting the percentage.

A cocktail with £1.20 of spirit, £0.60 of liqueur, £0.40 of juice, £0.20 of syrup and £0.10 of garnish costs £2.50 per serve. At £10 net revenue, that leaves £7.50 gross profit: 75% GP. An unpriced ingredient is missing information, not a free ingredient.

Frequently asked questions

  • Subtract the complete ingredient cost from net selling revenue. Divide the result by net revenue and multiply by 100. In the example, a £12 price including the selected 20% VAT gives £10 net revenue. With £3 ingredient cost, gross profit is £7 and GP is 70%. Use the VAT rate applicable to your sale.
